A trip to the DMV

Mom's all-time favorite place has to be the DMV. She went there today with Cassie, who needed a new license and decided to get her TSA Pre✓® while she was at it. I'm not even going to try and describe how it went; our text stream tells the tale better than anything I can add:

I guess Mom and Cass got called up soon after that, because the texts finally stopped, although it was still another 45 minutes or so till they got out of there. Just another day in the life of your mother.

Cassie is a big fan of Trader Joe's boxed mac and cheese, but I thought we would try a from-scratch version that she can make in about the same time it takes to make the stuff out of the box. She gives it a big ๐Ÿ‘. I think it's good stuff too, one of the only ways I've found to make pasta with cacio e pepe flavor without having the cheese go all clumpy on you. So make that ๐Ÿ‘๐Ÿ‘.




Stovetop Mac & Cheese for One
(Cacio e Pepe Style)

Adapted from Smitten Kitchen

Time: <30 minutes

1 teaspoon fine sea salt
113 grams (4 ounces) macaroni, rotini, cavatappi, or other small twisty shape
2 teaspoons (10 grams) butter
2 teaspoons (6 grams) all-purpose flour
120 grams (½ cup) low-fat or whole milk (I used 1%)
2 or more grinds of black pepper, to taste
30 grams (~½ cup) finely grated pecorino Romano cheese, or Parmesan or an aged Cheddar

    1. Bring a 3- to 4-quart nonstick saucepan half filled with water to a roiling boil. Add the salt and pasta and stir a few times during the first minute or two to keep the pasta from sticking. Cook until al dente. Drain and set aside. While the water is coming to a boil and the pasta is cooking, you’ll have plenty of time to prepare the rest of the ingredients. 
    2. Lower the heat to medium. Add the butter to the now-empty saucepan and place over the heat. When the butter is melted and foaming, stir in the flour. Stir or whisk (if you have a silicone whisk that won’t scratch your nonstick pan) for a minute until the mixture is golden. Stir or whisk the milk in slowly, a few tablespoons at a time. Stir or whisk in the freshly ground pepper. Bring the mixture to a simmer and cook, stirring constantly, for a minute or two. Remove from the heat. Stir in the grated cheese until smooth. Stir in the drained pasta until evenly coated. Serve immediately. Serves 1.
