I was supposed to make this snack mix for Brad's birthday on the day I was first in line at Bodo's, but we had way too much food already, so I skipped it. I finally made it this weekend instead. Mom was especially enthusiastic (as she usually is), but everyone, including Cass and JC who were in town for a friend's wedding, gave it the thumb's up. This is an easy thing to make ahead for a get-together. Just make sure you use better pretzels for the dish than I did.  
 
 

Sweet and Spicy Snack Mix

Time: ~40 total (~15 minutes hands-on)

The first time I made this all I had was the flat Trader Joe's pretzels, which you see in the photos above, but this is better with plain old Snyder's of Hanover Mini Pretzels you get at a regular grocery store. You can also make this with gluten-free mini pretzels (also Snyder's) and graham crackers if you must and don't mind paying the gluten-free tax (1 pound of Snyder's mini pretzels = $3.99 [25 cents/ounce]; ½ pound of Snyder's gluten-free mini pretzels = $4.79 [60 cents/ounce]).
 
140 grams graham crackers (see note)
140 grams mini pretzels (see note)
40 grams pepitas
40 grams sunflower seeds
45 grams unsalted butter
40 grams maple syrup
37 grams brown sugar
2 teaspoons curry powder
1 teaspoon kosher salt
½ teaspoon turmeric
¼ teaspoon cayenne, more or less depending on your spice tolerance/liking

    1. Place a rack in the center of the oven; heat to 325 degrees. Spray a 13-by-18-inch half-sheet baking pan with nonstick cooking spray (Pam).
    2. In a large bowl, break the graham crackers into roughly 1-inch pieces. Weigh in the pretzels, pepitas, and sunflower seeds.
    3. Place the butter, syrup, brown sugar, curry powder, salt, turmeric, and cayenne in a small saucepan over medium heat. Cook, stirring occasionally with a silicone spatula (better than wood here), until bubbling and completely mixed.
    4. Drizzle half of the sugar-spice mixture over the dry ingredients. Using one or two spatulas, gently stir/fold to start coating the ingredients. Drizzle over the remaining sugar-spice mixture, then gently stir/fold until everything is pretty evenly coated and sticky.
    5. Scrape onto the prepared baking sheet. Bake, without stirring, for about 20 to 25 minutes, until the graham crackers and pretzels are no longer all that wet and sticky to the touch.
    6. Transfer the baking sheet to a cooling rack and cool completely. You may have to break some larger pieces of the snack mix apart if it has clumped together. Store in an airtight container. Makes ~7 cups.
